Using a Polish Pottery Roaster, heat roaster on stove top to Medium High Heat, Add Vegetable Oil and add Beef Chuck Roast or Pot Roast.  It is important to make sure the roaster is nice and hot before adding the oil and meat.  Season both sides of the roast with salt and pepper, if you want a nice garlicy taste, you can cut some slits in the roast and insert cloves of garlic (3-5 per side).  Sear the roast on both sides, generally takes 3-5 minutes per side depending on the size of the roast. Searing or Braising the roast is so important if you want it to be tender and moist when you serve it.  After both sides have been seared, add 3 cups of water and bring to a boil.  As soon as it starts to boil, reduce heat to a simmer, cover and and cook on stove top for 3 hours.

Approximately one hour before serving, add the vegetables.  When this is done you can keep everything right in the roaster and bring to the table.   It looks absolutely beautiful as a serving piece.  Once on the table you can remove the roast with a fork onto a serving platter or cut it in the polish pottery roaster.  The meat should practically cut itself and fall apart!  Dinner guests can choose to take the vegetables and au jus as they like.

An Italian variation would be to add one small 8oz can of tomato sauce to the water before cooking - Yum!
